Feijoada, Brazilian Black Bean Stew

Four servings as a main with a side too.

Time: 30 minutes.

Preparation

  1. Fry the onion in the oil for 3-4 minutes, add the garlic and spices, and then the vegetables, turning them to coat them.
  2. Add the stock and the bay leaf, then the beans. Bring to the boil.
  3. Simmer for 10-12 minutes or until the sweet potato is tender.
  4. Remove from the heat, stir in the orange zest and remove the bay leaf before serving.
