Halloumi, Quinoa, and Vegetable Bake

Four servings as a main with a side (peas) too.

Time: 1 hour.

  1. Preheat the oven to 180°C fan.
  2. Put the vegetables on a sheet pan with sides. Drizzle over the olive oil and spinkle over the salt.
  3. Bake in the preheated oven for 30 minutes.
  4. Stir in the cooked quinoa, strained tomatoes, and mixed herbs. Top with the sliced halloumi.
  5. Bake for a further 10 minutes and serve.
