Halloumi, Quinoa, and Vegetable Bake
Four servings as a main with a side (peas) too.
Time: 1 hour.
Ingredients
- 600g peeled sweet potato, cut into 1cm3 cubes
- 1 medium aubergine, cut into 1cm3 cubes
- 2 tablespoons olive oil
- 250g packet of cooked quinoa
- 250g strained tomatoes from a tin
- 1 teaspoon dried mixed herb
- 250g halloumi, sliced
- 1½ teaspoon salt and pepper to taste
Preparation
- Preheat the oven to 180°C fan.
- Put the vegetables on a sheet pan with sides. Drizzle over the olive oil and spinkle over the salt.
- Bake in the preheated oven for 30 minutes.
- Stir in the cooked quinoa, strained tomatoes, and mixed herbs. Top with the sliced halloumi.
- Bake for a further 10 minutes and serve.
