Honey Harissa Halloumi Bake

Four servings as a main with a side (peas) too.

Time: 1 hour.

Preparation

  1. Preheat the oven to 180°C fan.
  2. Put the onion and sweet potato on a sheet pan with sides. Drizzle over the olive oil and spinkle over the salt.
  3. Bake in the preheated oven for 30 minutes.
  4. Meanwhile, mix together the harissa spice and honey in a small bowl.
  5. After the vegetables have been baking for 30 minutes, add the halloumi and the harissa/honey mix to the pan and stir thoroughly.
  6. Bake for a further 10 minutes and serve.
