Honey Harissa Halloumi Bake
Four servings as a main with a side (peas) too.
Time: 1 hour.
Ingredients
- 3-4 shallots, peeled and sliced
- 600g peeled sweet potato, cut into 1cm3 cubes
- 1 tablespoon olive oil
- 1½ teaspoon salt
- 1 tablespoon harissa paste
- 1 tablespoon runny honey
- 450g halloumi cut into 1cm3 cubes
Preparation
- Preheat the oven to 180°C fan.
- Put the onion and sweet potato on a sheet pan with sides. Drizzle over the olive oil and spinkle over the salt.
- Bake in the preheated oven for 30 minutes.
- Meanwhile, mix together the harissa spice and honey in a small bowl.
- After the vegetables have been baking for 30 minutes, add the halloumi and the harissa/honey mix to the pan and stir thoroughly.
- Bake for a further 10 minutes and serve.
